Lemon Cake


5 eggs
pinch of salt
3 tbsp orange juice
150 g sugar
1 lemon
150 g flour

 

 

Separate the whites from the yolks of the eggs.

Whisk whites until stiff, add pinch of salt and orange juice.

Mix well, add sugar, grated lemon rind, and mix these alltogether well.

Beat the yolks of the eggs, and add them, with the lemon juice, to the whites.

Sift the flour and add gradually into batter, keep beating the mixture well.

Put it into a pregreased baking tray.

Bake the cake about an hour at moderate temperature (180C or 350F).

Dust with icing sugar.
