candied mandarine peel

1000 g mandarines
400 ml water
1,5 tsp salt

 

400 g sugar
400 ml water
200 g sugar for coating

 

Wash mandarines well and peel the bark.

Peeled bark put into the pot, pour 400 ml of water and add 1.5 tsp of salt, stir well and cook at low heat until it boils .

This process will draw the bitterness of the bark.

Rinse boiled peel in cold water and cut it into sticks.

Mix 400 ml of water with 40 grams of sugar, boil until sugar disoves, then add prepared sticks of mandarine peel.

Cook for 30-40 minutes on low heat or until the crust becomes slightly transparent and syrup very thick.

Drain the cooked crust and switch on the wax paper.

Sprinkle with sugar, roll each stick in sugar and let it dry - preferably overnight .

Store in glass jars or paper bags.
