Pork With Mozzarella And Sage225 g pork tenderloin
1 garlic clove, crushed
80 g mozzarella cheese, cut into 6 slices
6 slices ham
6 large sage leaves
2 tbsp butter salt, black pepper


Trim any excess fat from the pork, then cut the pork crossways into six pieces about 2,5 cm thick.
Stand each piece of tenderloin on end and bat down with a rolling pin to flatten.
Rub with garlic and set aside for 30 minutes in a cool place.
Place a slice of mozzarella on top of each pork steak and season with salt and pepper.
Lay a slice of ham on top of each, crinkling it a little to fit.
Press a sage leaf on to each and secure with a cocktail stick.
Optionally, you can roll all together into a small roulades.
Melt the butter in a large heavy-based frying pan.
Add the pork and cook for about 2 minutes on the each side until you see the mozzarella melting.
Remove cocktail sticks and serve with potatoes and green beans.
