3 cups flour

3 cups milk

1 tbsp sugar

pinch of salt

lemon zest

Gramma's advice: If you replace 1 cup of milk with 1 cup of sparkling (mineral) water, batter will be more airy.

 

Mix all ingredients into smooth batter and leave it to stay a little.

Grease the pan and heat it.

Pour a little bit of batter on the pan in a thin layer.

Fry the crepe (pancake) until golden on one side, turn the other way and fry it until golden too.

Gramma's advice: The very first crepe should be eaten immedeatelly, that one is the best :)

Repeat with the rest of the batter.

Each crepe (pancake) can be stuffed with: marmelade or jam, chocholate, ground walnuts, brown or caster sugar or with fresh cottage cheese stuffing.

For fresh cottage cheese stuffing, mix 2 cups of fresh cottage cheese with 1 whole egg, 2 tbsp of sugar, pinch of cinnamon and little bit of rum.

Stuff the crepes (pancakes), roll them and place each roll into greased pan.

Pour with sour cream and bake in the preheated oven until golden brown.

Sprinkle with icing sugar.
