120 g butter
400 g sugar
350 ml milk
4 eggs
400 g flour
100 g cocnut flakes
2 tsp baking powder
1 mandarine
Mix butter with sugar to a cream.
Add milk and egg yolks.
Sift flour with baking powder, add into batter.
Add coconut flakes, mix all well.
Add juice and zest of 1 mandarine.
Whisk egg whites and stir in carefully.
Bake in a pregreased loaf shaped baking tray, at moderate temperature (180C or 350F).
Serve with cream.
